In the Gers, the producers of this noble product are strangled when they learn that a start-up intends to market a synthetic foie-gras.
A copy almost as realistic as the original? A French start-up wants to market a synthetic foie gras. A product with the same taste and texture as traditional foie gras according to the company, but without force-feeding or duck.
But in the Gers where the duck is king, this test-tube foie gras remains in the throats of the inhabitants and the producers. Foie gras produced in the laboratory gives Ginette goosebumps: “Everyone is free to do, but we must not mix everything up”
